Meet the Speakers

Meg Rowe MS, RD, LDN, FADA, FAND

Meg is a Registered Dietitian who graduated from Marywood University in Clinical Dietetics and earned her Master’s in Nutritional Biochemistry at St. Joseph’s College, West Harford Connecticut.

She has worked as a Clinical Dietitian, Clinical Nutrition Manager, Instructor at the University Of Connecticut School Of Medicine, Dietetic Internship Preceptor, provided nutrition expertise to a variety of child care facilities, long term care facilities, and as the nutrition consultant to the Milton Hershey School, the Penn State/Highmark Health Matters program and the Pennsylvania American Academy of Pediatrics.  She was a consultant to Bristol Myers Squibb and a reviewer for manuscripts for the American Dietetic Association.  


She is currently the PAND Licensure Task Force Chair, PAND CMS Task Force Implementation Chair for Long Term Care and Acute Care, and PA Chair of Delegates to the Academy House of Delegates, representing CPAND and NEPAND, and a member of and Chair of the Academy Consumer Protection and Licensure Sub-Committee.  Previously, she served as Treasurer for CPAND and PAND, co-chair for the 2012 AME, CPAND RD Day Chair, and PAND Consumer Protection and Licensure Coordinator


In addition to being a Fellow of the Academy of Nutrition and Dietetics and a Licensed Dietitian Nutritionist, she is the author of several publications and co-author of the textbook Managing Clinical Nutrition Services.


In 2015, she received the Keystone Award from the Pennsylvania Academy of Nutrition and Dietetics.  In 2016, the Pennsylvania Academy of Nutrition and Dietetics honored her as the Outstanding Dietitian of the Year.  

Pepin Tuma, Esq.

Pepin Andrew Tuma has been with the Academy of Nutrition and Dietetics since 2011, working to advance the Academy's public policy priorities through regulations and legislation, and serves as the Senior Director for Government and Regulatory Affairs.


Recent strategic initiatives include food and nutrition labeling, the Dietary Guidelines for Americans, obesity care, expanding Medical Nutrition Therapy reimbursement, implementation of the Affordable Care Act and other health care reform measures, consumer protection campaigns, and various community health initiatives.


Mr. Tuma has significant experience in government affairs and grassroots political campaigns and is a graduate of the College of William and Mary (History and Government) and the University of Virginia School of Law. He frequently speaks about issues at the intersection of law and health policy, with a recent focus on the impact of the First Amendment on government initiatives that empower or enable consumers to make knowledgeable, healthy choices about their health. 


Susan E. Adams, MS, RD, LDN, FAND

Susan E. Adams, MS, RD, LDN, FAND

Susan Adams, MS, RD, LDN, FAND believes that the profession of nutrition and dietetics is the best profession in the world because it affects everyone through the transformative power of food and nutrition.  She completed her undergraduate degree in food and nutrition with a minor in business and communications at The University of Akron and her graduate degree in nutrition at Kent State University. Her master’s thesis focused on nutrition education of Type II diabetics and the impact that their spouses/significant others had on the diabetics’ nutrition knowledge and retention of that knowledge.


As a Registered Dietitian, Susan Adams has over thirty years of experience including managing foodservice departments in hospitals and employee feeding operations, counseling a variety of outpatient clients in proper nutrition principles to regain health, evaluation and demonstration of consumer kitchen equipment, menu development, employee training, and employee wellness consulting. For the last nineteen years Susan, served as an Assistant Professor of Nutrition at La Salle University and taught nutrition to many future registered dietitians and nutrition professionals.  


In 2012, Ms. Adams was awarded the “Outstanding Dietetic Educator in a Coordinated Program” for the State of Pennsylvania and the Region Six of the Dietetic Educators - Dietetic Practice Group. An active member of many professional organizations, she currently serves the Pennsylvania Academy of Nutrition and Dietetics as their 2019-2020 president.  Susan is proud of helping mentor and guide the future and current dietetic professionals within a profession that she loves.

Toby Amidor, MS, RD, CDN

With close to 20 year’s of experience in the food and nutrition industry, Toby Amidor, MS, RD, CDN is a Wall Street Journal best-selling cookbook author, leading dietitian and recipe developer who believes that healthy and wholesome can also be appetizing and delicious.


Toby is the founder of Toby Amidor Nutrition, where she provides nutrition and food safety consulting services for individuals, restaurants and food brands. Her cookbooks include The Create-Your-Plate Diabetes Cookbook (American Diabetes Association, 2020), The Best Rotisserie Chicken Cookbook (Robert Rose, 2020), Smart Meal Prep for Beginners (Rockridge Press, 2018), The Easy 5-Ingredient Healthy Cookbook (Rockridge Press, 2018), The Healthy Meal Prep Cookbook (Rockridge Press, 2017), and The Greek Yogurt Kitchen (Grand Central Publishing, 2014).


For over 11 years she has been the nutrition expert for FoodNetwork.com, and founding contributor to their Healthy Eats Blog. Toby is a regular contributor to U.S. News and World Report Eat + Run blog, Shape.com, MuscleandFitness.com, Shape.com and has her own “Ask the Expert” column in Today’s Dietitian Magazine. She has been quoted in hundreds of publications such as FoxNews.com, Self.com, Oxygen Magazine, Reader’s Digest, Shape.com, and more and has also appears on television including shows like The Dr. Oz Show and Coffee with America. For the past 10 years she has been an adjunct professor at Teachers College, Columbia University teaching food service management. 


Toby trained as a clinical dietitian at New York University. Through ongoing consulting and faculty positions, she has established herself as one of the top experts in culinary nutrition, food safety, and media communications. In 2018, Toby was awarded by the Academy of Nutrition & Dietetics the coveted Media Excellence Award.

Nicole Goodrich, MS, RDN, LDN, CHWC

Nicole Goodrich, MS, RDN, LDN, CHWC

Nicole is an entrepreneur dietitian and a health coach. She is the founder of several companies including Anderson’s Nutrition, a multi-state, private practice, that has been thriving for 15 years. Anderson’s Nutrition works in several spaces including one-on-one counseling, corporate wellness, and group homes. The company also employs several dietitians. 


Her other business is Nutrition Business Consultants and Services, a company geared to assist the nutrition entrepreneur run a successful business. Nicole’s latest business is My K12 Resource. A company that provides services to school districts to manage their Child Nutrition Programs such as the National School Lunch Program. 


Nicole is an Arizona native and graduated from Arizona State University. She started her career in the government implementing USDA programs. Nicole moved into the private sector working for Southwest Foodservice Excellence where she gained her business expertise and left her position as Vice President of Health and Nutrition to fully invest in her entrepreneurial spirit.

Abigail Copenhaver, MS, RDN, CDN 

Abbey is a Registered Dietitian, dairy farmer, mom and owner of Farmstead Nutrition & Consulting, focusing on agricultural production, food technology, nutrition and fitness related services. In addition, she teaches at Finger Lakes Community College’s as a part of their 2-year Nutritional Science program.

Abbey and her husband farm with 3 other couples in the Finger Lakes region of NY on 2 dairy farms; Ivy Lakes Dairy & Gorham Dairy (totaling 1400 milking cows). 

 

Her academic background includes a B.S. from Cornell University in Animal Science; B.S. from Buffalo State College in Human Nutrition and Dietetics, and Master’s in Agriculture: Food Science and Management from Washington State University.

 

Maintaining an active presence in her community and profession Abbey holds memberships and active involvement with Academy of Nutrition Dietetics Farmer and RD Expert Committee, Genesee Dietetic Association, Northeast Dairy Association, MilkPEP, National Dairy Council and Dairy Sustainability Alliance.  

 

Abbey is a Team Chocolate Milk member, competing in running and triathlon races, including 70.3 and 140.6 Ironman distances. As a Registered Dietitian she practices with a farming, food and fitness approach. This approach encompasses the connection between agricultural food production, nutrition and physical activity to promote a healthy and sustainable lifestyle.

 


Lauren Harris-Pincus, MS, RDN

Lauren Harris-Pincus, MS, RDN

Lauren Harris-Pincus, MS, RDN, is a nutrition communications specialist, speaker, spokesperson, corporate consultant and Registered Dietitian in private practice. She is the founder and owner of Nutrition Starring YOU, LLC based in NJ where she specializes in weight management and prediabetes. She also completed the Monash University Low FODMAP training for dietitians.


Lauren is the author of the cookbook, “The Protein-Packed Breakfast Club: Easy High Protein Recipes with 300 Calories or Less to Help You Lose Weight and Boost Metabolism”. Formerly an obese child, Lauren dedicates herself to combating the growing adult and childhood obesity epidemic. She loves to play around in the kitchen creating waistline-friendly dishes and developing recipes for corporate clients. She holds both Bachelor of Science and Master of Science degrees in nutrition from Penn State and New York University. 


As a media RD, Lauren has been featured over 400 hundred times in major publications, radio and podcasts. She is also a contributor to Today’s Dietitian Magazine and Food and Nutrition Magazine. Follow her on social media @LaurenPincusRD

Patricia Davidson DCN,RDN, CDE, LDN, FAND

Patricia Davidson, DCN,RDN, CDE, LDN, FAND

Dr. Patricia Davidson is a registered dietitian, certified diabetes educator and Associate Professor, in the Nutrition Department, at West Chester University-PA. Clinical positions include in and out-patient diabetes education.


She is active in the Academy of Nutrition and Dietetics on various task forces and serves on the AADE practice paper committee. Research centers on prevention and management of diabetes throughout the lifecycle and the development of technology for diabetes management. She has extensive experience presenting and has authored/co-authored numerous manuscripts published in the Academy of Nutrition and Dietetics Journal, Nutrition and Clinical Practice, and American Informatics Association Journal.
